Hey there!

I just wanted to share this recipe that I am borderline obsessed with right now. I have a wicked sweet tooth. Always have (and apparently always will!) And of course, my body is so good with sugar that it turns it straight to fat. Very efficient, no? πŸ˜›

Some indulgences that don’t awaken the sugar monster are necessary to keep me on track. And by on track, I mean not hiding in the basement mowing through a box of cookies. #stresseating (That’s another post though!) πŸ˜‰ Anyways, this custard is so yummy AND it really is good for your body!

You’ll notice gelatin on the ingredients list, which will probably either make you think of Jell-O or just EWWWW. πŸ˜› Turns out gelatin isn’t just for desserts that are more fun to poke than to eat; it has important amino acids like glycine which help strengthen the skin, joints, and gut lining. Did you know that the gut lining is one of the body’s most important lines of defense? If it is damaged and “leaky” (otherwise known as intestinal permeability) things can get into your blood stream that don’t belong there! Leaky gut leads to inflammation and has been linked to autoimmune disease.

We don’t want that, so eat your gelatin! πŸ™‚

Healthy Berry Custard

Original recipe from Dr. Pompa, Whole 30 modification by me. πŸ™‚

  • 2 cans full fat, organic coconut milk
  • 2 cups frozen organic mixed berries
  • 1/3 cup grass fed beef gelatinΒ (You can add a couple more tablespoons if you want a thicker consistency, using 1/3 cup gives a pudding consistency, 1/2 cup for a spongey dessert. I prefer the pudding texture.) πŸ˜‰
  • 2 Tbs. vanilla extract
  • 10 Deglet Noor Dates (Whole 30 option) OR 1 tsp Stevita Stevia (ketogenic option)
  • 1/4 cup chia seeds
  • pinch of Himalayan pink saltΒ 

Place all ingredients except gelatin in a high powered blender (I use a Vitamix on the smoothie setting.) Let it blend until fruit is pulverized, then pour in gelatin through the hole in the lid as it continues to blend. This keeps you from getting any gelatin chunks. πŸ˜‰ Pour mixture into a dish, cover, and refrigerate for at least a half hour.
